Creamy White Wine Chicken
(Coq Au Vin Blanc)
Ingredients
Chicken drumstick 3 pcs
Mushrooms 10 pcs
Bacon 100 g
Onion 1
Garlic 3 petals
Butter 10 g
Thyme pinch of
Laurel leaf 1 pc
Black pepper pinch of
Salt pinch of
White wine 300 ml
Water 100 ml
Whipping cream 100 ml
Parsley pinch of
Italian style bread 2
Preparation
– Dice the onion, garlic and mushrooms separately
– After cleaning the chicken drumsticks , dry the surface water with kitchen paper
– Sprinkle some salt and black pepper on the chicken drumsticks
– Heat the pot over medium heat, add oil, fry one side of the chicken skin first, turn it over when it is slightly golden, then fry the other side
– Set aside
Method
– No need to wash the pot, add the bacon and sauté on medium heat for 3 – 5 minutes, until the bacon crisps up
– Add butter
– Add mushrooms and sauté until fragrant
– Add onion and garlic diced, fry until the onion becomes soft and the garlic diced emits a fragrance
– Pour white wine over those vegetables and stir well, also for deglazing the bottom of the pot
– Put the fried chicken drumsticks back in the pot
– Add water until all ingredients are covered
– Add thyme, laurel leaf and black pepper
– Stir evenly until boiling
– Cover the pot, simmer for 15 minutes on low heat
– Open the lid, check if there is enough liquid, add whipping cream and salt to taste, then turn to medium heat
– After boiling again, cover the pot, turn to low heat and simmer for 15 minutes until the chicken is tender
– Add a little butter and parsley, cook for 15 minutes with the lid on to finish
– Serve with Italian style bread
