Mussels in Champagne 
(Moules en Champagne) 

Ingredients

Mussels 1 pack

Chorizo sausage 10 pcs

Onion 1

Garlic 3 petals

Shallots 1

Butter 10 g

Thyme pinch of

Black pepper pinch of

Salt pinch of

Champagne 300 ml

Chicken broth 100 ml

Parsley pinch of

Crusty bread 2


Preparation

– Dice the onion, garlic and shallots separately

– After cleaning the blue mussels, check and discard any open blue mussels that will not close when squeezed gently (Dead mussels) 

– Set Aside 


Method 

– Heat the pot over medium heat, add oil, add the onion, garlic and shallots diced, fry until the onions are soft, and the diced garlic and shallots give off a fragrant aroma

– Add a little butter

– Add Chorizo sausage and stir fry until fragrant

– Add blue mussels for quick stir fry

– Add champagne

– Add chicken broth until all ingredients are covered

– Add Thyme, black pepper and salt to taste

– Add a little butter and parsley

– Stir evenly until boiling

– Cover the pot, turn to medium-low heat and cook until the blue mussels open (about 3 – 5 minutes)

– Serve with crusty bread
